The shavings come from the inner section of the shoulder ham, which is the meat surrounding the bone; it therefore has less fat and is the tastiest part. The cuts are smaller.
Bellota Iberian ham is the least salty ham thanks to the infiltrated dappled fat and proteins that prevent salt from entering the pieces.
